Ingredients:
2 pounds of mixed Play of Sunlight mushrooms
1 red bell peppers
1/2 onion
4 cloves of garlic
1/2 cup tomato paste
3/4 cups sherry
1 2/3 cups vegetable stock
2 tbsp cumin
1 tsp coriander
1/3 tsp smoked paprika
1/3 tsp thyme
1/3 tsp oregano
1/8 tsp cayenne
Neutral oil such as rapeseed or avocado
Instructions:
Preheat oven to 300 degrees.
Peel mushrooms apart in petals, removing only the very bottom of the stem where it was attached to the substrate. Sear mushrooms in two batches with neutral oil, seasoning reasonably with salt, and set aside. After the mushrooms are all cooked, add a little more oil to the pan, and sweat the onion and pepper down until fully cooked and add garlic, stirring until fragrant.
Add in the tomato paste, stirring until onions and peppers are all coated. Add in the sherry and stock, followed by the spices. Bring up to a boil and allow the liquid to thicken. Pour into a 9x13 glass baking tray or a similar sized metal tray, cover in foil, and braise in the preheated oven for 30 minutes, or until the mushrooms are very tender.
Makes 4 portions.
