Chef Jamila's Cream of Mushroom Soup

We got to enjoy Chef Jamila's Cream of Mushroom soup at her class at Brown's Kitchen. Now you get to enjoy it at home!

 

Ingredients (Serves 4–6)

2 tbsp unsalted butter

1 tbsp Brown's Kitchen Caramelized Garlic olive oil 

1 large onion, or 1/2 cup shallots, finely diced

3 cloves garlic, minced

1 lb of mixed mushrooms (Play of Sunlight Blue Oyster Mushrooms, shiitake, and cremini) sliced

1 Tbsp fresh thyme 

½ tsp salt (plus more to taste)

½ tsp freshly ground black pepper

¼ cup dry white wine or marsala for more depth of flavor

3 tbsp all-purpose flour

4 cups chicken or vegetable broth, warm

1 cup heavy cream 

½ tsp Worcestershire sauce 

2 tbsp chopped fresh parsley, for garnish

 

Instructions 

In a large pot, heat butter and BKCG olive oil over medium heat. Add onion and cook  until soft and transluscent, about five minutes. Stir in garlic and cook another 1 minute until fragrant.

Add mushrooms, thyme, salt, and pepper. Cook 8–10 minutes, stirring occasionally, until mushrooms release their liquid and begin to brown. Pour in white or marsala wine and let it simmer 2–3 minutes, scraping up any browned bits from the pot.

Sprinkle flour over mushrooms, stirring well to coat. Cook for 1–2 minutes to remove raw flour taste. Slowly whisk in warm broth. Bring to a gentle simmer and cook 10-12 minutes until slightly thickened. 

Use an immersion blender to puree the soup until smooth (or transfer in batches to a blender). Only blend half and leave the rest chunky if you would like a more rustic type soup. Stir in heavy cream and Worcestershire.

Taste and adjust seasoning with more salt and pepper as desired.

Ladle into bowls, garnish with parsley, or a drizzle of BKCG Olive Oil. Serve with crusty bread for dipping.

• Roast some of the mushrooms in the oven for deeper flavor before adding them.

• Add a drizzle of truffle oil before serving for a more elevated, luxurious finish.
